Why do honey bees often die after stinging a person?

The stinger of honey bee workers has small barbs. If it penetrates elastic mammalian skin, it can get stuck there. When it flies away, the sting apparatus, poison bladder and parts of the abdomen are torn out of the body, so that the worker dies. The sting apparatus that remains can continue to release poison for a while. Bumblebees can usually pull out their stinger and sting multiple times.
The well-known stinging and death mainly affects honey bee workers.
