What is starch?

Starch is a polysaccharide, a complex carbohydrate made of many linked glucose units. Plants store energy in the form of starch. It is therefore especially common in foods such as grains, rice, corn, and potatoes. During digestion, starch is gradually broken down into smaller sugar components that can eventually be used to produce energy. The FAO describes starch as the most important and quantitatively dominant digestible polysaccharide in foods.
Starch is made of many glucose units and is an important plant energy store.
