Why does yeast make dough rise?

During fermentation, yeast converts sugars and produces carbon dioxide. The gas becomes trapped in many small bubbles within the dough’s gluten network and expands the dough, making it lighter and larger. The bubbles rising in the reveal image are a visual representation of this process.
Temperature and time affect yeast activity.
