Along with carbohydrates and proteins, fats are macronutrients. Most dietary fats occur as triglycerides, which consist of glycerol and three fatty acids. Fat provides the body with a lot of energy, about 9 kilocalories per gram, and is also important for cell membranes, the absorption of the fat-soluble vitamins A, D, E, and K, and the supply of essential fatty acids.
Dietary fats differ partly in their fatty acids and their functions in the body.
